Creamy Carrot Soup

6 Carrots, pealed and shredded
1 chopped Onion
1 teaspoon chopped Garlic (or Garlic Powder)
2 Potato, pealed and shredded
2 Apples (Grand Smith) pealed and shredded
3 chopped Scallions
1 teaspoon fresh Ginger
1 Teaspoon Salt
¼ teaspoon white pepper (not Black!)
3 cups water
3 cups Non Dairy Creamer
For Decoration:
sliced toasted Almonds
chopped Basil
INSTRUCTIONS:
1. Sautéed the Onions
2. Slowly ad all the vegetables and water and bring
3. To boiling, add seasoning
4. Add Non Dairy Creamer and cook for 20 min (mid)
5. Cool and refrigerate for 4 hours
6. Serve Hot
